Abstract We study adhesion of the gluten proteins during shear and normal deformations as described by a coarse-grained molecular dynamics. show that two types deformation have different impact on proteins. also calculate dynamic modulus critical strain find results to be consistent with slip-bond theory which assumes can treated an interconnected network polymers.
